I discovered this recipe a few years ago on Gimme Delicous, and it has been my go-to for taco night ever since! It’s packed with flavor yet light on calories and fat, making it a perfect choice for a variety of meals.

I follow the recipe exactly, except I skip the cornstarch—I’ve found it’s not really necessary. This grilled taco chicken is incredibly versatile: enjoy it in soft or hard taco shells, over rice, or on a bed of salad greens with all your favorite toppings.
